Chinese pantry in two trips
You’ll leave with a paced plan: six useful bottles now, six unlocks later — no aisle binge.
Quick picks
- Trip 1 (6): light soy, toasted sesame oil, Chinkiang vinegar, Shaoxing cooking wine, oyster or veg oyster, rice.
- Trip 2 (6): dark soy, doubanjiang, fermented black beans or chili crisp you like, white pepper, cornstarch, one noodle type you’ll repeat.
- Rule: if a bottle isn’t needed by this week’s 2–3 dishes, it waits.
Decision rule
One trip should unlock dinners — not complete a museum of sauces. Buy the Trip 1 six (or fewer). Schedule Trip 2 after you’ve cooked with what you own.
What Trip 1 bottles look like
You’re hunting a short set of sauce-bay staples — not every jar on the wall.

Trip 1 — six bottles & staples
- Light soy 生抽
- Toasted sesame oil 香油
- Chinkiang black vinegar 镇江香醋
- Shaoxing cooking wine 料酒
- Oyster sauce or vegetarian oyster 蚝油 / 素蚝油
- Rice you’ll finish
That’s enough for many weeknight stir-fries, simple noodles, and dumpling dipping sauces.
Trip 2 — six more unlocks
- Dark soy 老抽
- Doubanjiang 豆瓣酱 (Pixian-style if you cook Sichuan heat)
- One chili situation you’ll repeat (crisp, oil, or flakes — small)
- Fermented black beans or bean sauce your recipes name
- White pepper + cornstarch (workhorses, easy to miss)
- Noodles matched to a recipe you already like
Fermented black beans look like: small wrinkled black beans (豆豉) — often in a pouch or jar in dry/sauce bays, not the same as canned black beans in the American aisle.

First-cart checklistFAQ
What if my store is missing Shaoxing?
Some cooks temporarily use dry sherry for cooking — different product. Prefer labeled cooking wine when available; see the Shaoxing guide.
Do I need a wok on trip one?
No. A large skillet works while you learn sauces.
Can Trip 1 be only three items?
Yes: light soy, sesame oil, vinegar covers a surprising amount. Add wine and oyster when recipes demand them.
